Ingredients for 4 servings:

  • 1 kg pak choi
  • 900 ml vegetable oil for frying
  • 1 tsp salt
  • 1 tbsp sugar
  • 50 g pine nuts

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Rinse the bok choy leaves under cold running water and pat dry. Discard the tough outer leaves. Cut the remaining leaves into thin strips. Heat the oil in a wok. Carefully add the leaf strips in batches and fry for about 30 seconds, until they collapse and become crispy. Drain on kitchen paper. Combine the salt, sugar, and pine nuts in a large bowl, then add the fried bok choy. Toss briefly and serve immediately.
