Ingredients for 1 servings:

  • 400 g spelt flour type 1050
  • 100 g spelt flour type 630
  • 1 packet of dry yeast
  • 1 tsp honey
  • 100 ml water
  • 3 tsp, leveled salt
  • 3 tsp, leveled malt
  • 3 tbsp chia seeds
  • 250 ml water,
  • 125 g bacon cubes
  • 50 g fried onions
  • 200 g cheese, grated
  • e.g. sunflower seeds, sesame and poppy seeds

Instructions

Working time approx. 30 minutes; Rest time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 30 minutes

Makes about 20 crispy sticks. Make a pre-dough from the flours and yeast with honey and warm water. Dust with flour and let rest until the flour cracks, about 5 minutes. Add the salt, malt, and chia seeds and knead into a dough with the water, kneading in the diced bacon and fried onions. Cover the dough and let it rise in a warm place for half an hour. Then knead the dough briefly and cut into two pieces. Roll out one piece on a floured surface to about 30 x 40 cm. Brush the dough with water and sprinkle one half with cheese. Overlap the empty half of the dough, then cut everything into about 10 strips. Twist these strips in on themselves and place on baking paper. Roll out the second piece as well. Brush the dough with water and sprinkle with sunflower seeds, sesame seeds, and poppy seeds. Then process as above. Now heat the oven to 200 °C, when the temperature is reached, put the trays in and let the sticks bake for 20 – 25 minutes.
