Crispy summer salad

Ingredients for 3 servings:

  • 4 handfuls of mixed salad
  • 2 spring onions
  • 1 bell pepper(s), red
  • 1 avocado(s)
  • ½ cauliflower
  • 4 tbsp rapeseed oil
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 1 tbsp garlic
  • 1 tsp Sriracha sauce
  • 1 tsp ginger
  • possibly salt if needed
  • Nuts, mixed

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with a spicy Asian dressing

Divide the cauliflower into florets and steam until al dente. Meanwhile, slice the bell peppers, slice the spring onions, and dice the avocado. Combine all salad ingredients in a large bowl. Mix the dressing ingredients well and toss into the salad. Season to taste with salt, if desired. Divide among bowls and garnish with the nut mixture.
