Crispy turkey breast with banana sauce

Ingredients for 4 servings:

  • 4 turkey schnitzels
  • 1 egg(s)
  • Flour
  • 250 g ground almonds, alternatively: desiccated coconut
  • 2 bananas
  • 4 tbsp butter
  • 250 ml chicken broth
  • 250 ml cream
  • salt and pepper
  • Curry, milder
  • Cayenne pepper
  • lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the turkey schnitzel, pat dry, and lightly pound. Then season with salt, pepper, and curry powder. Coat each schnitzel in flour, beaten egg, and ground almonds. Heat half the butter in a pan and fry the schnitzel until golden brown. Meanwhile, peel and slice the bananas and heat them in a saucepan with the remaining butter. Sprinkle with a little flour and curry powder, and sauté. Deglaze with the chicken stock and purée with a hand blender. Add the cream and thicken to the desired consistency. Season to taste with salt, cayenne pepper, and a little lemon juice, if desired.
