Crispy Turkey with Peanut Tomato Sauce

Ingredients
 

For the crispy turkey

  • 600 g Turkey breast schnitzel
  • 3 tsp Food starch
  • 1 Egg M
  • Salt and pepper
  • 1 tbsp Vegetable oil
  • 1,5 tbsp Sugar
  • 2 tbsp Honey
  • 5 tbsp Soy sauce
  • 200 ml Water

For the sauce

  • 2 Red onions cut into strips
  • 1 toe Garlic finely chopped
  • 1 tbsp Vegetable oil
  • 3 tbsp Peanut cream
  • 2 tbsp Soy sauce
  • 1 Can Chunky tomatoes -425 ml
  • 200 g Snow peas
  • 250 g Cherry tomatoes
  • 100 ml Cream
  • Salt, coriander, chilli flakes

And also

  • 500 g Bucatini - thin macaroni

Instructions
 

  • Wash, dry and cut the meat into cubes. Whisk the cornstarch with the egg and season with plenty of salt and pepper. Mix the meat with the starch mix before searing.
  • Wash and clean the sugar snap peas. Wash tomatoes and cut in half if necessary. Cook the pasta according to the instructions on the package until al dente and strain it.
  • In a pan, sauté the onions and garlic in the oil. Then stir in the peanut cream and soy sauce. Add chunky tomatoes and season with salt, coriander and chilli flakes. Bring to the boil and after about 5 minutes add the snow peas, tomatoes and cream.
  • In a second pan, fry the meat in the oil until crispy. Only turn when the meat cubes loosely loosen from the pan base (coated). Put the meat aside and caramelize the sugar in the roasting fat. Add honey, water and soy sauce. Bring to the boil and simmer for 5 minutes. Then add the meat and toss briefly.
  • Put the noodles in a sufficiently large bowl and mix carefully with the sauce. Spread the meat on the sauce.
