Crispy zucchini

Ingredients for 4 servings:

  • 8 small zucchini (100 g each)
  • 4 tbsp olive oil
  • 1 tsp basil, dried
  • 100 g breadcrumbs
  • 40 g Parmesan, grated
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 220°C. Mix the basil with 1 tablespoon of olive oil to form a paste and let it stand for a while. Wash the zucchini and trim the ends. Halve the zucchini lengthwise and place on a baking sheet. Brush the zucchini with the basil and oil paste, season with salt and pepper. Mix the breadcrumbs with Parmesan cheese and sprinkle over the zucchini. Carefully drizzle the remaining olive oil over the zucchini. Bake in the oven for about 20 minutes until golden brown.
