Croissants

The perfect croissants recipe with a picture and simple step-by-step instructions.

  • 1 kg Flour
  • 1 dice Fresh yeast
  • 3 tbsp Sugar
  • 1 tsp Salt
  • 250 ml Buttermilk
  • 250 ml Milk
  • 3 Eggs
  • Butter for brushing, room temperature
  • Filling:
  • Nutella or jam of your choice
  • Egg yolks mixed with a little milk to brush
  1. Knead the dough ingredients into a smooth dough and divide it into 2 parts. Let it rest for about 30 minutes.
  1. Preheat the oven to 180 degrees (convection 160 degrees). Line the baking sheet with parchment paper.
  1. Divide each dough ball into 8 balls and roll out individually. Brush the first sheet of dough with butter and place the second sheet on top. Continue until all 8 sheets of dough are on top of each other. Do not butter the last one. Roll out and cut into 12 triangles. Fill of your choice. You can also prepare them without a filling.
  1. Proceed in exactly the same way with the 2nd ball of dough.
  1. Roll up each triangle from the long side towards the tip so that you have croissants. Place the croissants on a baking sheet and cover and let them rest until they have enlarged. Brush with the egg yolk and milk mixture and bake for about 20 to 25 minutes until golden brown.
