Ingredients for 8 servings:

  • 2 tbsp olive oil
  • 300 g minced meat
  • 1 garlic clove(s)
  • 2 tbsp tomato paste
  • 1 bell pepper(s), diced
  • salt and pepper
  • rosemary
  • Thyme
  • basil
  • 8 slices of white bread
  • 250g mozzarella
  • e.g. arugula

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Preheat the oven to 230°C. Heat the olive oil in a pan, brown the minced meat, add the garlic, and stir in the tomato paste. Add about 3/4 of the peppers and the seasonings. Toast 8 slices of white bread, spread the minced meat mixture on top, arrange the mozzarella in thin slices, and scatter the remaining diced peppers on top. Bake until the cheese melts slightly. Serve garnished with arugula. Double the batch and serve with a salad, and it also makes a small lunch.
