Crostini with bananas and bacon

Ingredients for 4 servings:

  • 4 slices of ciabatta
  • 50 g bacon or ham
  • 1 large banana(s)
  • 1 small lemon(s) (organic), zest
  • 50 g cheese (Gouda), grated
  • some thyme stalks
  • 1 pinch(s) of black pepper from the mill

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Bake the ciabatta slices in the oven at approximately 200°C for about 5-10 minutes. Then let them cool slightly. Cut the bacon or ham into small cubes and fry them with a few thyme leaves in a pan over medium heat until crispy. Add the grated lemon zest and season well with pepper. Salt is not necessary, as the bacon or ham is already very spicy. Peel the banana, slice it, and spread it on the bread slices. Top with the bacon and thyme mixture and sprinkle with grated cheese. Bake the crostini briefly again in the oven at approximately 200°C and garnish with a few small thyme leaves before serving.
