Ingredients for 2 servings:
- 200 g spaghetti (whole grain spaghetti)
- 350 g zucchini
- 1 onion(s)
- 2 garlic cloves
- 2 tomatoes
- 1 tbsp olive oil
- salt and pepper
Instructions

Cook the spaghetti according to the package instructions until al dente. Peel and finely dice the onion and garlic. Remove the flower end from the zucchini and slice it into thin sticks. Remove the stem end from the tomatoes and cut into small cubes. Heat the olive oil in a pan and sauté the onion and garlic. Add the zucchini strips and a splash of water, bring to a boil, and simmer for another 1-2 minutes. Add the cooked spaghetti and diced tomatoes to the zucchini in the pan. Mix well and season with salt and pepper.
