Cuban anise chicken

Ingredients for 4 servings:

  • 4 medium-sized chicken legs
  • 1 tbsp sunflower oil
  • 300 g honey, liquid
  • 1 tsp, leveled anise powder
  • Anise, fresh
  • 250 g peanuts, unsalted
  • some salt
  • some pepper, coarsely ground

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 40 minutes

Place the chicken thighs in a baking dish with a little sunflower oil and bake in the oven at 200°C for about 30-40 minutes until crispy. For the sauce, combine the honey and anise powder, and perhaps a little fresh anise. Add the peanuts and season with salt and pepper. Spread the sauce over the chicken thighs. Continue baking in the oven at 180°C for about 30-40 minutes, until the peanuts are shiny brown and the sauce is bubbling away. Serve with rustic bread and a mixed salad.
