Cucumber and minced meat pan

Ingredients for 2 servings:

  • 500 g cucumber(s)
  • 1 tbsp oil
  • 150 g minced meat, mixed
  • salt and pepper
  • 250 ml vegetable stock
  • 4 spring onions
  • 2 small carrots
  • Parsley, dill
  • 200 g sour cream
  • 2 tsp sauce thickener

Peel and deseed the cucumbers, halve, and slice them. Brown the ground beef and add the sliced ​​cucumber. Season with salt and pepper and sauté for about 5 minutes. Then deglaze with stock. Simmer for 10 minutes. Chop the spring onions and carrots and add them to the pan after about 5 minutes. Season with chopped dill and parsley and add the cream. If necessary, thicken with the sauce until smooth. Bring everything to a boil and serve with rice. A fruity Italian white wine goes well with this dish.
