Baked curry loin with pineapple

Ingredients for 2 servings:

  • 1 pork loin(s)
  • 1 small can of pineapple, in pieces
  • curry powder
  • 250 g cheese, grated Gouda
  • 500 g sweet cream
  • Tomato paste
  • Paprika powder
  • Broth, instant, cubes
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slice the loin and fry briefly in a pan with oil. Then place it in a greased baking dish. Arrange the drained pineapple pieces on top. Season generously with curry powder (there needs to be a good layer). Sprinkle with grated cheese. Mix together the sweet cream and 1/2 a tube of tomato paste. Season to taste with paprika, salt, pepper, and the stock cube. Pour the mixture over the loin. Cook for about 1 hour at 180°C. Cover with aluminum foil first, then remove it to brown later. Serve with rice.
