Cucumber and pepper salad in Icelandic cream cheese and mustard dressing

Ingredients for 2 servings:

  • ½ cucumber(s)
  • 1 m.-sized bell pepper(s), red or yellow
  • 2 tbsp Skyr
  • 2 tbsp milk, 1.5%
  • 2 tbsp vinegar, mild
  • 1 tsp mustard
  • salt and pepper
  • sweetener

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the cucumber and bell pepper. Finely dice the cucumber. Halve the bell pepper, remove the seeds, and dice it as well. Stir together the dressing and season to taste. Combine all ingredients and serve.
