Cucumber and strawberry salad

Ingredients for 4 servings:

  • 1 salad cucumber(s), or 3-4 smaller farm cucumbers
  • 500 g strawberries
  • 1 handful of basil
  • 1 lemon(s), juice
  • some honey, or sugar or maple syrup, depending on your taste
  • 2 tbsp oil (walnut or pistachio oil)
  • Salt and pepper, black

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the cucumber, or leave the skin on if using small farm-grown or organic cucumbers. Then quarter the cucumber and remove the seeds, then cut into small pieces. Wash, hull, and quarter or chop the strawberries. Add to the cucumbers and season lightly with salt and pepper. Slice the basil leaves and add them as well. Make a marinade with the lemon juice, 1-2 tablespoons of water, honey (or sugar, stevia, or maple syrup—to taste), and the oil. Pour it over the salad, mix well, and let it sit for a moment. It goes wonderfully with roasted chicken.
