Cucumber and tomato salad

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 1 shallot(s)
  • 11 cocktail tomatoes (vine tomatoes)
  • 2 tbsp vinegar
  • 1 tsp sugar or honey
  • 3 tbsp oil
  • 3 tbsp water, cold
  • salt and pepper
  • Herbs

Instructions

Working time approx. 5 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 5 minutes

Peel, halve, and slice the cucumber. Wash the tomatoes, remove the stems, and quarter them. Place everything in a bowl, stir in the salt, and let it sit. Meanwhile, peel and finely chop the onion. Wash and chop the herbs and add everything to the bowl. Then add pepper, oil, vinegar, and water. For a slightly sweeter salad, add sugar or honey to taste. Stir everything in well and let it sit for a while. Mix again lightly before serving.
