Cucumber and yogurt raita

Ingredients for 4 servings:

  • 1 cucumber(s), unpeeled
  • 2 spring onions
  • ½ tbsp fresh ginger
  • 2 tbsp peppermint, fresh
  • 3 tbsp lemon juice
  • 375 ml natural yogurt
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

belongs to every Indian meal; serve with Indian bread (naan, popadams)

Deseed and grate the cucumber (without peeling it), finely chop the onions, grate the ginger, and finely chop the mint. Mix all ingredients together and refrigerate for at least one hour.
