Cucumber – Beans – Salad

Spread the love

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 300 g beans (green beans), frozen or from a jar
  • 2 tbsp oil (rapeseed oil)
  • 2 tbsp vinegar (herb vinegar)
  • dill
  • Parsley
  • chives
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Thinly slice the cucumber and sprinkle with a little salt to allow it to draw moisture. Discard the cucumber water, otherwise the salad will be too watery. Cook the beans in a little salted water and then rinse with cold water. Mix together the vinegar and oil, add the herbs, and season with salt and pepper. You don’t have to use fresh herbs; frozen herbs are also delicious. I always prepare the salad a day in advance; it simply tastes better that way.
