Ingredients for 3 servings:
- 1 cucumber(s)
- 1 mango(s)
- 1 orange(s)
- 100g Gouda
- 30 g cashew nuts
- 3 tbsp olive oil
- ½ lemon(s), the juice
- 1 tsp mustard
- 1 tsp honey
- 1 tsp chili paste
- Herbs
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel the vegetables and fruit. Cut into small cubes. Cut the cheese into small pieces. For the sauce, whisk the oil with mustard and honey until smooth, add the lemon juice, and season with the chili paste. Add the herbs and spices. Mix the sauce with the fruit and cheese thoroughly and sprinkle the cashews over the sauce.
