Cucumber salad

Ingredients for 4 servings:

  • 2 pieces of cucumber
  • ½ tsp salt
  • 15 g ginger, freshly grated
  • 75 ml vinegar (apple cider vinegar or similar)
  • 2 tbsp honey

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes

special note with ginger, vinegar & honey

Peel, halve, and deseed the cucumbers. Cut into approximately 1/2-cm-wide pieces. Sprinkle with salt and place in a colander to drain. Make a sauce with the ginger, vinegar, and honey (preferably runny). Add the sauce to the cucumber pieces and let it stand for about 30 minutes.
