Ingredients for 4 servings:

  • 4 tomatoes
  • 2 red bell peppers
  • 2 chili peppers
  • 1 onion(s)
  • 15 mint leaves
  • 1 bunch of parsley
  • 8 tbsp olive oil
  • 1 tbsp lemon juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Finely dice the tomatoes, bell peppers, chili peppers, and onion. Finely chop the herbs, mix with the diced vegetables, season with salt, and pepper. Combine the oil and lemon juice, add, mix well, and let it simmer for a while.
