Cucumber salad with feta cheese

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 100 g spinach
  • ½ iceberg lettuce
  • 1 cup of yogurt (cream yogurt)
  • 2 garlic cloves, crushed
  • salt and pepper
  • 6 tbsp olive oil
  • 20 g olives, black, pitted
  • 150 g sheep’s cheese, crumbled

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the cucumber and slice it with the skin on. Trim and wash the spinach and drain well. Trim and wash the iceberg lettuce and drain well, then roughly tear it into small pieces. Place the cucumber slices in a bowl with the spinach and lettuce leaves and mix. Mix the creamy yogurt, crushed garlic, salt, pepper, and olive oil to make a sauce. Season to taste and pour over the salad. Sprinkle with the black olives and crumbled feta cheese and serve.
