Cucumber Salad with Rocket and Ayran

The perfect cucumber salad with rocket and ayran recipe with a picture and simple step-by-step instructions.

  • 1 Cucumber
  • 0,5 bunch Arugula
  • 2 Spring onions
  • 2 Charlotte
  • 1 Garlic clove chopped
  • 250 g Ayran
  • 2 tablespoon Cold pressed olive oil
  • 1 tablespoon Raw cane sugar
  • 1 teaspoon Lemon zest
  • 1,5 teaspoon Guar gum
  • Green pepper from the mill
  1. Slice the cucumber, cut the spring onions into slices and dice the charlottes. Chop the rocket.
  2. Mix the ingredients together.
  3. Mix the ayran with the zest of half a lemon. Add the garlic, sugar and olive oil. Pepper. Thicken with guar gum.
  4. Pour over the cucumber salad and let rest for 30 minutes.
