Cucumber salad with watermelon

Ingredients for 10 servings:

  • 5 cucumbers
  • 1 small melon(s), watermelon
  • 1 m.-sized onion(s)
  • 1 bunch of parsley
  • Salt
  • pepper
  • Vinegar
  • oil

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Peel the cucumbers, then slice or quarter them as desired. If possible, choose a slightly riper watermelon for flavor, and cut the flesh into small pieces, ideally removing the seeds at the same time. Finely chop the onion and parsley and add to the cucumbers and watermelon. Season with salt and pepper (I also like mozzarella salt), a little seasoned vinegar, and olive oil. A tip: if the garden party or picnic isn’t for another hour or two, please dress the salad shortly beforehand, otherwise the salt on the cucumber will make it too watery.
