Cucumber sandwich

Ingredients for 3 servings:

  • 6 slices of toast (sandwich)
  • 150 g cream cheese
  • ½ cucumber(s)
  • 2 tsp lemon juice
  • 100 g smoked salmon, or crab or shrimp
  • 1 dash of Worcestershire sauce
  • salt and pepper

Mix the cream cheese with lemon juice, Worcestershire sauce, pepper, and salt. Chop the salmon or, if desired, small crabs or shrimp (available pre-packaged, ready-to-eat). Peel the cucumber, slice it lengthwise into thin strips using a vegetable peeler (leaving out the flesh inside, as it will retain too much water), lightly salt it, and let it stand for 10 minutes, then drain the water. Spread the slices of toast generously with the cream cheese mixture, arrange the salmon/crab/shrimp on top, and then arrange the cucumber slices on top. Top with another slice of toast, press down firmly, and remove the crust if desired. For a little extra flair, you can add cress to the cream cheese mixture instead of the fish.
