Cucumber stew

Ingredients for 4 servings:

  • 400 g potatoes
  • 1 ½ cucumber(s)
  • 2 onions
  • 250 g tomatoes, peeled from the can
  • 30 g margarine
  • ½ liter meat broth
  • salt and pepper
  • Sugar
  • 1 bunch parsley, finely chopped
  • 1 bunch dill, finely chopped
  • 4 sausages (ham crackers) or 6 wieners

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Peel, wash, and dice the potatoes. Wash, peel, halve, remove the seeds, and slice the cucumber. Peel and finely chop the onions. Chop the tomatoes and slice the sausages. Heat the margarine in a saucepan and fry the diced onions until translucent. Add the sausages and potatoes and fry briefly. Then add the meat broth and bring to a boil. Simmer for 10 minutes over medium heat, then add the tomatoes and cucumbers and simmer for another 10 minutes. Season with salt, pepper, and sugar. Stir in the parsley and dill just before serving. This stew tastes even better the next day!
