Ingredients for 6 servings:

  • 400 g tapioca flour
  • 400 g cheese, grated, variety according to taste
  • 2 tbsp butter
  • 2 tsp baking powder
  • some salt
  • e.g. milk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Bolivian cheese rolls

Mix all ingredients with your hands. The warmth of your hands helps the cheese and butter form the dough. Finally, add just enough milk so that the dough is still slightly crumbly. Determine the desired amount of salt by tasting. I always use plenty, but not everyone might like it as salty as I do. Preheat the oven to 190°C (375°F) top/bottom heat. Form the balls to the desired size. Make a hole in the bottom with your finger and place the rolls on a greased or parchment-lined baking tray. Bake in the oven for 10-20 minutes, depending on the size. When they start to turn golden brown, they’re done. The insides might take some getting used to, as they’re tough and rubbery due to the high cheese content, but fresh out of the oven, I can’t think of anything better.
