Ingredients for 1 servings:
- 112 g butter, soft
- 112 g sugar
- 2 eggs
- 30 ml liquid, e.g. milk, juice, alcohol or other
- 1 pinch of salt
- 112 g flour
- 4 g baking powder
- 60 g chocolate or fruits or other firm ingredients
- 150 g cream cheese
- 150 g powdered sugar
- 150 g butter, soft
- n. B. Lemon flavor or orange flavor, a few drops of it
- possibly food coloring, preferably gel or paste coloring
- 30 ml Baileys Irish Cream
- 60 g chocolate chunks, dark
- 30 ml milk
- 60 g blueberries
- ½ vanilla pod(s), including the pulp
Instructions
Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour
with variations possible, for 12 cupcakes
Preheat the oven to 180°C (top/bottom heat). Place 12 paper or silicone baking cups in the muffin tin. Add the ingredients for each variation to the batter. Beat the butter with sugar and salt until smooth. Whisk the eggs with the liquid and then add them to the butter while whisking quickly. Sift the flour and baking powder into the butter mixture and mix the batter until smooth. Finally, fold in the solid ingredients. Then divide the batter into the tins. I always measure the weight of the batter to ensure a fairly even result – each tin needs about 40-42g of batter. Place the muffin tin on the middle rack and bake for about 20 minutes. For the frosting, briefly beat the butter until fluffy. Sift the powdered sugar and stir in. Then add the cream cheese, a few drops of flavoring if desired, and food coloring if desired. Beat with a whisk only as long as absolutely necessary until a smooth batter forms. Never mix with an electric hand mixer. The mixture will become thinner and become unpipable! Please do not add anything liquid, except for the classic flavoring bottle, as this will negatively affect the consistency. After making the mixture, pour it directly into the piping bag. However, it may need to be chilled again afterward for a nice piping result. Tip: For the frosting, you can also use lemon/orange peel or vanilla seeds instead of flavoring.
