Curd – banana – patties

Ingredients for 4 servings:

  • 250 g quark (curd) 20%
  • 2 eggs
  • 1 tbsp vanilla sugar
  • 2 tbsp honey or cane sugar
  • some lemon zest, grated
  • 1 tsp lemon juice
  • 1 tbsp raisins
  • 1 banana(s)
  • 50 g brioche or 1 crumbly croissant
  • 100 g almond flakes
  • 60 g clarified butter or butter for frying

Working time approx. 20 minutes; Total time approx. 20 minutes

Not only children love this dessert

Mix the curd cheese with one egg, vanilla sugar, honey or cane sugar, lemon zest and juice, and raisins. Dice the banana. Dice the brioche or croissant into small cubes and add to the curd mixture along with the banana. Let it sit for 10 minutes. Scoop out about 12 portions, using a tablespoon if necessary. With slightly moistened hands, form small patties and coat them in the beaten second egg and the flaked almonds. Heat half the amount of clarified butter or butter in a non-stick pan. Add the patties and fry over low heat for about 2 minutes on each side. Drain on kitchen paper. Fry the remaining patties in the remaining fat. Serve dusted with icing sugar, ideally with a fruit sauce (e.g., strawberries pureed with icing sugar).
