Ingredients for 12 servings:

  • 300 g flour
  • 750 g milk
  • 2 eggs
  • 1 egg yolk
  • 80 g sugar
  • Salt
  • 500 g quark
  • 80 g butter
  • 40 g sugar
  • 40 g raisins
  • 4 egg yolks
  • 250 g cream
  • Salt, lemon, vanilla
  • 3 g protein
  • 80 g sugar
  • 125 g cream
  • 125 g sour cream
  • 5 eggs
  • 2 egg yolks
  • 250 g milk
  • 50 g sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For the batter: Mix flour, milk, egg, egg yolk, sugar and a pinch of salt until smooth. Add oil to a pan and cook the pancakes/crepes until golden brown. For the filling: Mix the butter and sugar and slowly add the egg yolk. Then add the cream and quark. Now beat the egg whites and sugar until stiff. Then fold the beaten egg whites into the quark mixture. Next, pour a little of the mixture onto a crepe and arrange it together like a present. Place it in a greased baking dish with the openings facing down (otherwise it will stick to the dish). For the icing: Mix the cream, sour cream, eggs, egg yolk, milk and sugar and pour over the crepes. Bake the whole thing at 190°C (fan oven) or 170°C (convection oven) for about 45 minutes.
