Hobbit-style poppy seed casserole

Ingredients for 4 servings:

  • 80 g white bread
  • ⅛ liter milk
  • 130 g butter
  • 30 g powdered sugar
  • 1 packet of vanilla sugar
  • Lemon peel, grated
  • Orange peel, grated
  • 1 tbsp rum
  • 1 tbsp honey
  • 6 eggs, separated
  • 100 g sugar
  • 130 g poppy seeds, ground
  • 20 g flour (preferably spelt flour)
  • 20 g breadcrumbs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the bread into cubes and soak in milk. Cream the softened butter with powdered sugar, vanilla sugar, lemon and orange zest, rum, and honey until fluffy. Gradually add the egg yolks. Squeeze the white breadcrumbs well, strain, and stir into the butter mixture. Beat the egg whites with granulated sugar until stiff peaks form, fold into the butter mixture, and stir in the poppy seeds mixed with flour and breadcrumbs. Pour the poppy seed mixture into a buttered and floured dish and bake in a preheated oven at 160°C for about 50 minutes. Portion out, toast, and serve with cranberry compote or plum compote.
