Ingredients for 1 servings:

  • 1 kg currants
  • 1 kg gelling sugar, 1:1
  • possibly gin

Instructions

Bring washed, destemmed currants to a boil while stirring, then strain through a sieve. Bring the currant pulp and preserving sugar to a boil while stirring, then simmer for 4-6 minutes, then test for settling. While still hot, pour into prepared jars, seal tightly, and let cool upside down. If you like, stir a small shot of gin into the jam before filling. Without the seeds, this jam is also perfect for filling cookies.
