Curry chicken with rice and tropical fruits

Ingredients for 2 servings:

  • 350 g chicken breast, boned
  • 1 can of tropical fruits
  • 1 cup of cream
  • 1 banana(s)
  • 2 tbsp curry, medium hot
  • 1 cup long grain basmati rice
  • 2 cups of water
  • Butter or clarified butter
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the rice in a pot, add twice the amount of water, add a little salt, place the covered pot over the heat, and bring the water to a boil. Continue simmering until the rice has completely absorbed the water and is cooked through. Wash the chicken breast, pat dry, and cut into thin strips. Brown it in butter or clarified butter, add the curry, and cook until combined. Add the tropical fruit and the chopped banana, and deglaze everything with a cup of cream. Simmer for a few more minutes and season with curry and salt.
