Curry couscous with mango and peanuts

Ingredients for 2 servings:

  • 100 ml yogurt, 0.1% fat
  • 1 tbsp lime juice
  • 1 tsp curry powder
  • ½ tsp ginger powder
  • salt and pepper
  • 1 tbsp olive oil
  • 100 g couscous
  • 120 ml water
  • ½ mango(s)
  • 1 chili pepper(s)
  • 2 spring onions
  • 40 g peanuts, salted, roasted

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Combine yogurt, lime juice, curry, ginger, salt, and pepper, add oil, and stir to combine. Bring 120 ml of water with salt and a dash of oil to a boil, remove from heat, add couscous, and let it swell for 5 minutes, then add to the curry yogurt. Chop the mango, chili, and spring onions and add them to the couscous along with the peanuts.
