Curry fillet with fruit

Ingredients for 6 servings:

  • 700 g pork fillet(s), or half poultry meat
  • 1 large can of peach(s)
  • 3 bananas
  • 500 ml cream
  • 2 tbsp curry
  • Tabasco
  • 6 tbsp tomato ketchup
  • 200 g cheese, grated
  • Salt and pepper, black
  • Cayenne pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Shred the meat, brown with pepper, season with salt, and place in a baking dish. Slice the peaches and bananas. Place the fruit over the meat. Mix the cream with the curry, spices, and ketchup, and season to taste. Pour over the meat and fruit mixture and sprinkle with grated cheese. Bake in a preheated oven at 200°C for approximately 25-30 minutes. Serve with rice.
