Ingredients for 2 servings:
- 200 g pork fillet(s)
- 2 apples
- 1 banana(s)
- 2 tbsp raisins
- 2 onions
- 3 tbsp sour cream
- 300 ml vegetable stock
- curry powder
- Paprika powder, hot
- Salt
- 2 tbsp parsley, chopped
- 1 tsp oil
- Basmati
- 1 tbsp sauce thickener, lighter, if needed
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Dice the apples and onion. Trim the pork fillet of fat and cut into strips. Brush a non-stick pan with oil and briefly fry the apples, onions, and meat. Pour in the vegetable stock and simmer everything with the lid on over low heat for about 10 minutes. Meanwhile, cook the basmati rice in salted water. Now add the raisins and sour cream to the meat pan. Season everything generously with curry powder and season to taste with salt and paprika. If necessary, stir in 1 tablespoon of light sauce thickener if the mixture is too runny. Turn off the heat, peel the banana, slice it, and fold it in. Serve everything on plates with the basmati rice and sprinkle with parsley. Very fruity and low in calories.
