Curry with seitan

Ingredients for 4 servings:

  • 500 g seitan (homemade)
  • 2 cloves garlic
  • 1 onion(s), chopped
  • 1 tbsp tomato paste
  • 1 tbsp ajvar
  • 500 ml vegetable stock
  • 1 tbsp curry paste, yellow
  • 1 cup of yogurt
  • 1 cup crème fraîche
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the seitan with the garlic and onions. Add the ajvar, tomato paste, ajvar, and spices and bring to a boil briefly. Pour in the vegetable stock and simmer for 5-10 minutes. Stir in the crème fraîche and yogurt. Thicken with flour, if desired. Delicious with plain jasmine rice and salad!
