Currywurst burger with potato pancakes

Ingredients for 3 servings:

  • 3 burger buns (sourdough buns), see my recipe in the database
  • 400 g minced pork
  • 1 tsp salt
  • ¼ tsp white pepper, ground
  • ¼ tsp curry powder
  • 1 egg(s), size L
  • 10 g cream
  • ½ tsp sweet paprika powder
  • 60 g crackers, e.g. from Tuc
  • 1 onion(s)
  • 3 tbsp tomato paste
  • 200 g tomato ketchup
  • 100 ml apple juice
  • 2 tsp curry powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste
  • ½ tsp table vinegar
  • 330 g potatoes
  • fried onions
  • mayonnaise

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

with a curry-paprika patty

Prepare sourdough buns according to this recipe: http://www.chefkoch.de/rezepte/3288341488286929/Sauerteig-Burger-Bun.html Patty: Blend all ingredients until smooth. Weigh the mixture, divide it into 3 equal pieces, and shape. Curry sauce: Dice the onions and fry them in oil until translucent, then fry the curry powder and cayenne pepper. Mix in the tomato paste and continue frying. Deglaze with ketchup and apple juice. Let it simmer for 10 minutes. Add the vinegar and season with salt and pepper. Pour into a tall container and mash. Potato pancakes: Grate the potatoes into fine strips, form 6 patties, and fry in oil until golden brown. Topping: Cover the bottom of the bun with a potato pancake, then add some curry sauce and the patty on top, then some more curry sauce, then fried onions and, if you like, mayonnaise, another potato pancake and then the bun lid.
