Ingredients for 4 servings:
- 2 tbsp oil, neutral
- 2 onions
- 3 bell peppers, red
- 1 mango(s), ripe
- 2 tbsp tomato paste
- 1 can of tomatoes, pureed, approx. 400 g each
- 100 ml mango juice
- 5 tbsp applesauce
- 10 dashes of Tabasco
- 2 tbsp sugar
- 2 tsp salt
- 1 tsp pepper
- 2 tbsp paprika powder, sweet
- 4 tbsp curry powder
- 4 sausages, raw
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes
Peel and dice the onions. Trim, deseed, and dice the bell peppers. Peel and dice the mango. Heat the oil in a large pot and sauté the onions and bell peppers for about 10 minutes. Add the diced mango and fry briefly. Stir in the tomato paste and sauté for a few minutes. Pour in the passata, mango juice, and applesauce, along with the spices, and simmer gently for 20 minutes. Puree the sauce until smooth and season again to taste. Make several diagonal cuts in the sausages, then grill or fry. Arrange the sausages on plates, pour the sauce over them, and sprinkle with a little more curry powder, if desired. Serve with fries, sweet potato fries, oven-baked vegetables, potato wedges, or vegetable fries.
