Currywurst sauce without ketchup

Ingredients for 1 servings:

  • 1 onion(s)
  • 1 tbsp tomato paste
  • 1 shot of red wine
  • 1 cup vegetable broth
  • 500 ml tomatoes, pureed
  • 1 tbsp tomato paste
  • 2 tbsp honey or brown sugar
  • 1 ½ tbsp, leveled curry powder
  • 1 tsp sweet paprika powder
  • 1 pinch(s) of cayenne pepper
  • 1 tbsp, leveled vegetable stock powder, instant
  • 1 tbsp, whipped Worcestershire sauce
  • 3 tbsp vinegar
  • some oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Dice the onion and sauté it in a pan with a little oil until translucent. Add the tomato paste and sauté briefly. Then deglaze with a splash of red wine. Add the cup of vegetable stock and blend everything with an immersion blender. Add the remaining ingredients and simmer on low heat for about 10 minutes. This sauce makes enough for about 10 sausages. It goes well with French fries or toast, of course.
