Czech cheese soup

Ingredients for 4 servings:

  • 1 roll
  • 2 tbsp butter
  • 60 g flour
  • 1 liter of broth (also instant broth)
  • 125 ml whipped cream
  • 150 g semi-hard cheese, 45% fat.
  • 1 egg yolk
  • some salt and pepper
  • 1 pinch(s) sweet paprika powder
  • some stalks of parsley, chopped
  • possibly sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Sýrová polévka – even beginners can score points with it

Cut the bread roll into cubes and fry in half the butter. Melt the remaining butter in a saucepan and stir in the flour. Pour the broth and cream into the roux. Simmer for 10 minutes, then grate the cheese into the soup. Season with pepper to taste; a pinch of sugar is also fine. Blend with the egg yolk. Add parsley and paprika. Serve with the toasted bread roll cubes.
