Czech potato dumplings

Ingredients for 4 servings:

  • 600 g potatoes
  • 100 g semolina
  • 100 g flour, strong or instant flour
  • 1 egg(s)
  • ½ tsp salt

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Peel the potatoes and cook as usual. Then, while still hot, mash them. Immediately stir in the semolina and let the mixture cool. Once the potato mixture is cold, add the flour, egg, and salt (the amount of flour ultimately depends on the type of potato) and knead everything well. The mixture should be nice and firm. Then halve them and form them into two rolls (diameter as desired) – I use about 5-6 cm thick. Then boil these rolls in boiling water for about 15-20 minutes. Finally, remove from the water, slice, and serve with a good meal.
