Curry cream soup with apples

Ingredients for 4 servings:

  • 4 apples, juicy, sour
  • 2 shallots
  • 2 cloves garlic
  • 1 piece(s) ginger (the size of a shallot)
  • 50 g butter
  • 1 liter of broth
  • 2 tbsp curry powder
  • salt and pepper if needed
  • Chives, cut into rolls
  • possibly lemon juice

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel and finely chop the shallots, garlic, and ginger. Peel and quarter the apples. Remove the cores and cut the apples into pieces. Heat the butter and sauté the prepared apples thoroughly. Sprinkle with the curry powder and cook until golden brown. Then deglaze with the stock and simmer for about 15 minutes (until the apples have broken down). Purée with a hand blender and season with salt, pepper, or a few drops of lemon juice, if desired. Serve sprinkled with chives.
