Dad's potato salad

Ingredients for 6 servings:

  • 1 kg potatoes
  • 2 onions
  • 5 gherkins
  • 1 tbsp sunflower oil
  • 1 tbsp vinegar essence
  • 250 ml water
  • 1 tbsp vegetable stock powder
  • 1 tbsp mustard
  • 2 tbsp cucumber juice
  • 1 tsp sugar
  • salt and pepper

Instructions

Working time approx. 25 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 20 minutes; Total time approx. 6 hours 45 minutes

Cook the potatoes in their skins until tender. Meanwhile, slice the cucumbers and finely dice the onions. Place both in a bowl. Add the oil, vinegar, mustard, sugar, and cucumber juice and stir to combine. When the potatoes are ready, peel them, slice them, and add them to the bowl. Bring the water to a boil, add the vegetable stock, and stir to combine. Pour this stock over everything and mix thoroughly. Season the salad with salt, pepper, sugar, and vinegar, if desired.
