Daim cake (Daimkaka)

Ingredients for 4 servings:

  • 225 ml flour
  • ½ tsp baking powder
  • 1 packet of vanilla sugar
  • 180 g confectionery (Daim)
  • 75 g butter
  • 125 ml sugar
  • 2 large eggs
  • 4 tbsp milk
  • 1 cup of cream (200 g)

Working time approx. 1 hour; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 35 minutes

Cut the daim into small pieces, set aside 3-4 tablespoons, and mix the rest with the flour and baking powder. Cream the sugar, vanilla sugar, and butter until fluffy. Add the milk and beat in the eggs one at a time, then fold in the flour mixture. Pour the batter into a 22 cm prepared baking dish and bake at 175°C (top/bottom heat) for about 25-35 minutes. Allow to cool. Whip the cream until stiff, spread it on the cake, and sprinkle the remaining daim pieces on top. In Sweden, it is customary to give measurements in ml, except for butter; simply use a regular measuring jug.
