Ingredients for 1 servings:

  • 3 eggs
  • 300 ml sugar
  • 1 tbsp cinnamon, ground
  • 1 tbsp ground ginger
  • 1 tbsp clove(s), ground
  • 150 ml jam (cranberry jam)
  • 150 ml sour cream
  • 150 g butter, melted
  • 1 tsp baking soda
  • 450 ml flour

Beat the eggs and sugar until frothy. Add the spices, cranberry jam, and sour cream and stir in. Mix the flour with the baking soda and stir in along with the melted butter. Pour into a 2-liter dish and bake in a preheated oven at approximately 175°C for 50-60 minutes on the middle rack. At the end of the cooking time, do the toothpick test. You can be creative with the spices and vary the quantities according to your taste. Baking powder can also be used instead of baking soda as a raising agent, and the amount of cranberry jam is about 5 tablespoons. The result is very moist and, if well wrapped, will keep for 2-3 weeks. It freezes well.
