Ingredients for 2 servings:

  • 1 white bread
  • 500 g tomatoes
  • 4 cloves garlic
  • 1 tsp oregano, dried
  • 7 tsp basil, dried
  • 3 tbsp olive oil
  • 1 tsp thyme, fresh
  • 100 g feta cheese
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

toasted white bread with tomato

Preheat the oven to 125°C. Cut the white bread into thick slices. Dry the slices in the oven for about 20 minutes. Remove and place on a platter. Briefly blanch the tomatoes in boiling water and peel them. Then quarter and deseed them. Peel and finely chop the garlic. Briefly puree the tomatoes in a blender with the herbs and tomatoes (it’s okay to leave some small pieces of tomato!). Then add salt, pepper, and olive oil. Spread the puree on the toasted bread. Sprinkle with thyme leaves and coarsely grated feta cheese and serve immediately.
