marinade

  • 300 g Whole wheat flour
  • 300 g Wheat flour
  • Salt
  • 0,5 liter Beer
  • 1 piece Yeast cubes
  • Sugar
  • Water
  • 125 ml Pumpkin seed oil
  • 1 tbsp Sour cream
  • 1 shot Water
  • Walnut vinegar
  • Fresh cress
  • Salt
  • Pepper

Cheese boat

  • 200 g Goat cream cheese
  • 250 g Quark
  • 4 leaf Chicory
  • 1 packet Dandelion
  • 1 packet Lamb’S lettuce
  • 4 disc Black Forest ham
  • Sunflower oil
  • 1 Pc. Egg
  • Seasoned Salt
  • Herbs
  • Pepper
  • Sour cream
  • Cashew nuts with a spicy flavor
  • Candied cranberries
  1. Pumpkin seed sticks: First the “steamers” are prepared by mixing the yeast with a spoonful of sugar until it is liquid. Then you add the wholemeal flour and a dash of water. Position the steamer in a warm place so that it can rise in peace. Chop the pumpkin seeds and mix with 300g wholemeal flour and the salt. Then add the small bottle of beer and knead into a dough with the risen steamer. Let the dough rise for another 20 minutes. In the meantime, knead the white flour with the salt, a large dash of sunflower oil and a little lukewarm water to form a strudel dough. Shape the two doughs into sticks and twist them together. Whisk an egg, brush the sticks with it and sprinkle with pumpkin seeds. Let the finished coiled rods rest a bit and then bake in the oven at 200 degrees until golden brown.
  2. 2nd marinade: Mix the pumpkin seed oil, walnut vinegar, a little water, fresh cress, salt + pepper and sour cream.
  3. Cheese boat: Mix the goat cream cheese with a little sour cream and quark and season with herbal salt, herbs and pepper. Wash the chicory and cut off 4 leaves of the same size. Then form small dumplings with two teaspoons and distribute one dumpling on each slice of pork scarlet ham / Black Forest ham. Then add a few candied cranberries and a few chili cashews to the goat cheese. Roll up the bacon leaf and place the roll on a chicory leaf. Then wash the dandelion and lamb’s lettuce, spin dry and distribute on plates. Place the finished cheese boat and a few pumpkin seed sticks on the plate, drizzle with the marinade and decorate with the remaining cranberries.
