Danish Æbleskiver

Ingredients for 1 servings:

  • 160 g flour
  • 150 g cane sugar
  • 100 ml soy milk (soy drink)
  • 150 g soy yoghurt (yoghurt alternative), neutral
  • 1 tsp vanilla sugar
  • 1 pinch of cinnamon powder
  • 1 pinch of cardamom powder
  • 1 tsp baking powder
  • 1 tsp, leveled salt
  • 1 orange(s), zest
  • some margarine to grease the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

First, mix the dry ingredients, then add the soy milk and soy yogurt. Mix everything thoroughly. Heat the Æbleskiver pan and add a little margarine to the holes. When the pan is hot, fill the holes (quickly!) halfway with batter. The pan shouldn’t be too hot, as this will cause the Æbleskiver to cook too quickly on the outside but not yet be cooked on the inside. Jam, powdered sugar, applesauce, or maple syrup go well with the Æbleskiver. Makes about 14.
