Danish honey cake

Ingredients for 1 servings:

  • 250 g honey
  • 150 g sugar
  • 80 g butter
  • 3 tbsp water
  • 1 tsp ginger powder
  • ½ tsp nutmeg, grated
  • 500 g flour
  • 1 packet of baking powder
  • 2 eggs
  • Salt
  • Margarine, for greasing
  • 150 g almonds

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat honey, sugar, butter, and water in a saucepan. Let cool. Mix the cinnamon, ginger, nutmeg, flour, and baking powder in a bowl. Stir in the honey mixture with the eggs and a generous pinch of salt. Grease a loaf pan. Pour in the batter. Blanch the almonds with hot water, peel them, and place them in the surface of the batter. Place the pan in the preheated oven and bake at approximately 180°C for about 45 minutes. Remove the cake from the oven and let it cool in the pan. Cut into 20 slices the following day at the earliest.
